Grated carrots are the secret to these moist muffins.
Steel Blade: Process flour, bran, baking soda, cinnamon, nutmeg and salt for 4 or 5 seconds. Transfer to large mixing bowl. Cut carrots in 1-inch chunks. Process until fine, scraping down sides of bowl as necessary. Measure 1 cup and add to mixing bowl.
Process eggs and oil for 3 seconds. Add with remaining ingredients to mixing bowl and stir with a wooden spoon just until blende
