These muffins are moist, light and delicious.

Ingredients

  • 1 cup flour (part whole wheat, if desired)
  • 1 tsp baking soda
  • 1

Method

Steel Blade: Place flour, baking soda, baking powder, salt, dates and sugar substitute in processor. Start with 3 or 4 quick on/off pulses, then process 6 to 8 seconds longer, until dates are coarsely chopped. Add remaining ingredients and process with 3 or 4 quick on/off pulses, just until mixed. Do not overprocess.

Spoon batter into sprayed muffin cups.
