These muffins are so quick to make and a perfect choice for breakfast or a snack. The recipe is from my Auntie Fay Rykiss of Winnipeg-her grandchildren love them.

Ingredients

  • ½ cup tub margarine or butter, melted and cooled
  • 4 eggs
  • 3 Tbsp

Method

Steel Blade: Process margarine, eggs and sugar for 2 minutes, until well blended. Don’t insert pusher in feed tube. Add cottage cheese and process a few seconds longer, until blended, scraping down sides of bowl as needed. Add flour and baking powder; process with 4 or 5 quick on/offs to combine.

Spoon batter into sprayed muffin cups, filling them three-quarters full.
