Method

Blend burnt sugar syrup, brown sugar, water and corn syrup in a saucepan. Cover and bring to a boil. Uncover and cook until mixture reaches 242°F on a candy thermometer, or spins a 6- to 8-inch thread when dropped from a fork. Beat egg whites with an electric mixer until stiff peaks form.
