Dissolve gelatin in boiling water. Chill until partially set (should have the consistency of unbeaten egg whites).
Steel Blade: Process cheese until smooth and creamy, 1 to 2 minutes. Add gelatin; process 30 seconds longer, until blended. Scrape down sides of bowl as necessary.
For maximum volume, use an electric mixer to whip dessert topping with milk. Beat until stiff.
