Thanks to Ricki Heller, who shared this no-bake gluten-free dessert from her cookbook, Sweet Freedom. This is her husband’s favorite dessert! Ricki uses 70% dark chocolate, but chocolate chips also work.

Ingredients

  • scant ½ cup packed avocado purée (from 1 small barely ripe avocado)

Method

Line a miniature loaf pan (about 6 × 3 inches) with plastic wrap and set aside.

Steel Blade: Process avocado, vanilla and salt until smooth. Leave mixture in processor.

In a heavy-bottomed pot, combine chocolate, orange juice and maple syrup. Using lowest heat possible, stir constantly until melted and smooth, about 5 minutes. Immediately add to avocado mixture. Blend unt
