Quick, easy and refreshing—almost like ice cream.
Drain peaches, reserving ½ cup peach juice. Measure 2 cups drained peaches.
Steel Blade: Process peaches with reserved peach juice, sugar, brandy and extract. Purée until smooth. Meanwhile, whip cream with electric mixer until stiff. Add whipped cream to peach purée. Blend in with 3 or 4 on/off pulses.
Pour mixture into 1-quart mold. Freeze until firm. To unmold, dip mold
