Joni Brinder-Frydrych, vicepresident of the Canadian Celiac Association (Toronto) for 13 years, is an expert on gluten-free recipes. I’ve adapted her recipe for these scrumptious cookies, using my processor to speed up preparation. I use potato starch, but Joni uses tapioca starch.
