Ingredients

  • 1 cup butter, cut in chunks
  • 1 cup brown sugar, lightly packed
  • ½

Method

Preheat oven to 350°F.

Steel Blade: Process butter, sugars, egg and vanilla extract for 2 minutes. Add flour, oats and baking soda; process with several quick on/off pulses, just until mixed. Do not overprocess. Scrape down sides of bowl as needed. Mix in chocolate chips

I made these cookies with my son for New Year. I substituted 55g of dark chocolate chips for mint chocolate chips, used less sugar and Daim bars instead of Skor Bars. The recipe suggests ‘dropping spoonfuls onto baking sheets’. We were not told what size. My son used tablespoons and put big mounds out. As a result the mixture all ran together into baking sheet sized cookies. I would have placed smaller amounts in the baking tray. However, they tasted good and were very moreish. I particularly liked the mint flavour in them. I would like to try the recipe again but make smaller biscuits.
