For dough: Dissolve sugar in warm water. Sprinkle yeast overtop and let stand 8 to 10 minutes. Stir to dissolve.
Steel Blade: Process butter with flour until crumbly, about 10 seconds. Add egg yolks and yeast mixture. Process until a soft dough is formed, about 15 seconds. Wrap dough in plastic wrap and refrigerate overnight.
