Method

Steel Blade: Cut butter and shortening into 6 or 8 pieces; place in processor. Add flour and salt. Turn machine on and off quickly 4 or 5 times (2 or 3 seconds each time), until mixture looks like coarse oatmeal. Add water in slow stream through feed tube while machine is running. Process just until dough begins to gather around the blades, 10 to 12 seconds once all the liquid is added.
