  • 3 eggs
  • 1 cup water
  • ¼ cup potato starch

Method

Steel Blade: Combine eggs, water, potato starch, cake meal, 1 Tbsp oil and salt. Process until smooth, about 15 seconds.

Grease crêpe pan or nonstick skillet lightly for the first blintz. Pour about 3 Tbsp batter (just enough to cover bottom of pan) into skillet and cook for about 45 seconds on 1 side only, until top surface is dry. Flip and cook for 5 seconds on second side. Tur
