This creamy cheesecake is perfect for Passover or anytime! For non-Passover use, substitute your favorite cookie crust.

Ingredients

Crust

  • ½ lb (250 g) pkg Passover mandelbroit cookies (or chocolate macaroons)

Method

Preheat oven to 350°F. Fill baking pan half full of water and place it on bottom rack of oven. (The steam helps prevent cheesecake from cracking.)

For crust: Process cookies on the steel blade to make fine crumbs, 20 to 25 seconds. Add margarine and process just until combined,
