These crisp, gluten-free cookies are the Jewish version of biscotti—and they’re absolutely addictive! Bake them in loaf pans because they’ll spread too much if you try to bake them on a cookie sheet. Mandelbroit is the Jewish word for “almond bread,” but if you make them with chocolate chips, they’ll become “Chips-cotti!”

Ingredients

  • 3 eggs
  • 1 cup sugar
  • ¾ cup oil

Method

Preheat oven to 350°F. Spray two 9- × 5-inch loaf pans with nonstick spray.
