Prepare Caldo de Pollo. When you have lifted the chicken out of the stock, let it cool enough to handle. Remove and discard the skin. Carefully pull the meat from the bones, discarding any remaining fat or gristly bits. Tear the meat into fine shreds and refrigerate if not using at once
