Baaraas are light and spongy urad bean fritters that resemble small doughnuts. Traditionally, the soaked urad daal is ground using a silouto and bachhaa (stone slab and roller), giving it a smooth and fluffy consistency, but this recipe uses a food processor or blender to produce an equally good result. They are best served fresh but can be stored overnight. Baaraas are not an everyday foodstuff, but are associated with special religious and ceremonial occasions.
