This is my favorite mid-afternoon snack and I make it frequently for a quick lunch served with yogurt and pickle. The ingredient list may look long, but the dish is simple to prepare. It is a convenient snack to pack for a picnic or short outing as it can be eaten at room temperature.

Spread the rice flakes on a large platter and pick out any foreign matter such as unhusked rice, stems, or powdery flakes and discard. Wash, rinse, and drain the rice flakes until water runs clear. Put the rice flakes in a medium-size bowl, cover with cold water, and soak for 1 minute. The softened rice flakes should be firm, not mushy or lumpy. Drain completely.
