Namkeen or nimki are deep-fried flour crackers flavored with ajowan seeds, which provide a distinct flavor and can be used whole or crushed. Ingredients

  • cups all-purpose flour plus extra for rolling

Method

In a medium-size bowl, mix the flour, crushed ajowan seeds, salt, and baking soda. Add the butter and rub it into the flour mixture with your fingers until the mixture resembles a coarse meal.
