This is my basic everyday recipe for cooking rice. In this absorption method, the rice is cleaned and rinsed in a few changes of cold water, and soaked in a measured amount of water. It is then simmered while covered until all the water has been absorbed into the rice. This recipe works for any variety of long-grain or medium-grain white rice. I prefer to make moist and tender rice with each grain separated, so that it is not sticky or dry. Plain rice is a versatile dish that can be served
