This recipe is so versatile that any combination of vegetables, meats, eggs, nuts, and spices can be used. If you do not have leftover rice, you can cook fresh rice, but make sure to cool it completely before frying, or else it will be mushy. Rice usually hardens when cooled, but cooking over low heat and occasionally sprinkling in a little water will soften it. Fried rice is considered a complete one-dish meal and can be served by itself or with salad, yogurt, and pickles.
