Sukkhaa-roti, also called phulkaa-roti, or just roti, is a thin unleavened flatbread prepared from durum whole-wheat flour. It is the most basic Nepali bread, very light textured, easy to prepare, and usually cooked just before serving. Typically, the dough is rolled into thin circles and cooked on a dry Nepali cast-iron griddle (taabaa), but any regular griddle that has even heat distribution can be used. Expert cooks can roll and cook the bread at the same time
