In Nepal, we call chayote squash “ishkush,” probably derived from the word “squash.” It is a type of squash that grows on a climbing vine. The plant produces a light green fruit, resembling a pear, with crispy white flesh and a single large, soft seed. Its shoots, roots, and fruits are widely used for different varieties of curries. Be sure to select young unblemished chayote for the freshest flavor. Chayote squash is available at Asian markets and some large supermarkets.
