This is a basic recipe for cooking goat, but it works equally well with lamb, pork, water buffalo, venison, or even poultry. Traditionally, bone-in goat is used, which contributes more flavor, but boneless meat can also be used. In this recipe, goat is marinated for several hours before cooking. If the meat is tender and lean, it should cook in its own juice without additional water. Serve with rice, bread, and vegetables.
