Tandoori chicken is originally from northern India, but it is also very popular in Nepal. Traditionally, the marinated chicken is cooked in a tandoor, a cylindrical clay oven sunk in the earth that is heated to a very high temperature with a charcoal fire. The chicken cooks very quickly in the intense heat, which seals in the juices and flavor. Although the authentic flavor of a tandoor cannot be duplicated in a regular oven or on an outdoor grill, this is my simplified versio
