Bhujuri, the Nepali version of scrambled eggs, is made with herbs, spices, and chopped vegetables or cooked meat. For this recipe, any vegetables can be used. Bhujuri goes well with rice or roti, or as a snack with cheuraa (pressed rice flakes).

Ingredients

  • 3 tablespoons vegetable oil
  • 1 medium onion, finely chopped (about 1 cup)

Method

Heat the oil in a large nonstick or cast-iron skillet over medium-high heat. When the oil is hot, add the onion, green chilies, green onions, ginger, and garlic and cook, stirring constantly, until the onions are soft, 5 to 7 minutes.
