Here is a flavorful and delicious pomelo and orange salad dish dressed in Nepali spices and finished up with tempering spices. It is the most refreshing salad, full of immunity-boosting vitamin C— like sunshine in a bowl—and Nepalese enjoy it in the depth of winter.
Heat a small cast-iron skillet over medium heat and toast the sesame seeds for about 2 minutes, stirring constantly to prevent the seeds from flying out, until they give off a pleasant aroma and darken. Transfer the seeds to a dry container to cool. Place the cooled seeds in a spice grinder or mortar and pestle, and grind to a fine powder.
