Roasted tomato chutney is a Nepali classic, prepared fresh daily in small quantities. Traditionally, the tomatoes are roasted in a small clay pot (makkal) over a charcoal fire, resulting in a smoky flavor. The roasted tomatoes are then crushed in an oval-shaped stone mortar and pestle (khal), and their tangy taste is enhanced by the addition of Nepali timmur.
