Bell-shaped peppers are also known as capsicum, sweet peppers, and bhede khursaani in Nepali. These days you can purchase all different colors of bell peppers—red, green, yellow, or orange. They are the same peppers in different stages of ripeness. You can use any variety of bell peppers or mix them to create this colorful achaar, but I use green ones here. This green pepper achaar is tangy and the toasted sesame seeds add a delicious touch.
