Rasbari is a popular sweet dish made for special occasions. In Nepali, “ras” is “juice” and “bari” is “balls,” so rasbari translates to “savory balls in juice.” To make rasbari, the fresh cheese is shaped into small balls and then simmered in a delicately flavored syrup until they double in size and become light and spongy, with a delicious dairy-rich taste. Rasbari are best served at room temperature, right after they are made. Once they have been
