Yogurt (dahi) is considered one of the most important dairy products in Nepal. Making it at home is simple and most of the equipment needed is already in your kitchen. You can also use reduced fat milk (2% fat), low-fat (1% fat), or skim (no fat), whatever you prefer. The fat content of the milk you use will dictate the consistency of your yogurt: the higher the fat content, the creamier the yogurt will be.
