It’s easy to make your own dough (see sidebar), but ready-made frozen puff pastry makes it even easier and the result is delicious. In seventeenth-century Safavid Iran, they preferred a sweet and savory sanbuseh (as I have given in the ingredients for the Pistachio and Lamb Filling above). The inside of the sanbuseh is salty and savory, while the outside is sweet and aromatic with a dusting made with confectioners’ sugar, rose petals, and ground pista
