This quick pickle is also called torshi-e hazeri.

Ingredients

  • 6 Persian cucumbers, or 1 long seedless cucumber, peeled and sliced or diced
  • ½ cup (75

Method

  1. Peel cucumber (optional) and slice thinly using a mandolin slicer.
  2. Combine all ingredients in a bowl and toss well. Serve as an appetizer or accompanied with Persian bread. It is also excellent with kababs. Nush-e Jan!
