In Shiraz, they traditionally made this salad using verjuice instead of lemon juice. It’s a delicious option you might want to try if you have some verjuice.


  • 2 firm ripe tomatoes
  • 1 long seedless cucumber or 6 Persian cucumbers

  1. Cut out the tomato stems and score a crosshair at the bottom. Drop tomatoes into scalding hot water for about 1 minute or until the skins lift up. Remove with tongs or a slotted spoon, place in bowl of ice or ice water, peel. Place on a cutting board and dice. Peel and dice the cucumber into 1-inch cubes.
  2. Just before serving, whisk together the lime juice, garl
