  • 1 pound (450 g) calf or lamb tripe, soaked, cleaned, rinsed, drained, and cut up
  • 6 cups

Method

  1. Place tripe in a heavy-bottomed pot with 6 cups water and bring to a boil. Skim froth as it forms; as soon as it stops forming add the onion, garlic, bay leaves, turmeric, and vinegar (do not add salt because it changes the color of the tripe). Cover and simmer over low heat for 3 to 4 hours or until tender. Skim broth occasionally while cooking. Add more warm water if n
