  • ¼ cup (60 ml) oil
  • 2 onions, peeled and thinly sliced

Method

  1. Heat oil in a pot and add all the vegetables, salt, and pepper, and stir-fry for 2 minutes. Add the chicken broth and bring to a boil. Add the oats, cover, and simmer over medium heat for 55 minutes. Check to be sure all the vegetables are tender. Use a hand mixer to partially puree the soup. Add the lime juice and stir well.
