Method

Replace the eggplant with pounds (625 g) zucchini (not peeled, thinly sliced, place in a dish towel and any juice squeezed out, and sautéd for 5 minutes per step 3). Everything else remains the same, except in step 5, replace the lime juice with ½ teaspoon red pepper flakes and zest of 1 lime. Continue with the recipe (photo).
