Method

  1. In a 10-in/25cm skillet, heat 3 tablespoons oil over medium-low heat until hot. Brown onions and garlic. Add the spinach and herbs, cover and allow to cook for 2 minutes. Uncover, season with salt and the peppers, and sauté for 5 minutes over medium heat.
  2. Spread out the spinach mixture evenly in the skillet. Reduce heat to low. Use the handle of a wooden spoon
