  • 1 lamb liver
  • 4 lamb kidneys
  • 4 lamb hearts

Method

  1. Clean liver and cut into strips 1 in/2.5cm thick. Cut kidneys into 1-inch cubes and slice hearts lengthwise into strips 1½ in/4cm thick.
  2. Light a bed of charcoal and let it burn until the coals glow evenly or preheat the broiler in your oven. In a saucepan, combine all the ingredients for the baste and keep warm.
