In a Dutch oven, heat 3 tablespoons oil over medium heat and brown meat, onions, and garlic. Add salt, pepper, turmeric, cayenne, and cinnamon, and sauté for 1 minute.
Pour in water—2 cups/480ml for meat, 1 cup/240ml for chicken—cover, and cook over low heat for 45 minutes for meat or 15 minutes for chicken, stirring occasionally.
