Ingredients

  • 8 Chinese eggplants (2 pounds/900 g), or 2 large regular eggplants

Method

  1. Remove the crowns from the eggplants, peel and slice them into ¼-inch/6mm-thick-by-3-inch/7.5cm lengths.
