This is a spring dish prepared during the quince blossom season. It is very nutritious as well as delicious.

Ingredients

  • 8 cups (600 g) fresh quince blossoms, or 4 cup/200

Method

  1. Carefully rinse the quince blossoms in a colander and separate the petals. Place the petals in a saucepan with 4 cup water and cook over low heat for 15 minutes until tender.
  2. Transfer petals to a food processor and grind with confectioners’ sugar.
