Place the fruit in a medium saucepan and add 4 cups/960ml water. Bring to a boil over medium heat, cover, and simmer for 5 minutes. Add the rest of the ingredients except mint, stir gently, cover, and allow to cool. Taste and add more honey if needed.
Transfer to a glass container. Cover and refrigerate for 30 minutes or until chilled.
