Rahat al-Lokum in arabic and rahat al-holqum in Persian, means “contentment for the throat.” It comes in many varieties, most flavored with lime or orange juice, but some with pomegranates, grapes, or mulberries. The pink type is usually scented with rose water and the green with mint

Method

  1. In a small bowl, combine all the ingredients for the dusting.
  2. Line a half sheet pan with parchment paper and sprinkle half of the dusting mixture over it evenly. Set aside.
  3. To make the syrup, combine the water, sugar, lime juice, and rose water in a medium-sized, heavy-based saucepan. Bring to a boil over high heat, reduce heat to medium, and simmer f
