This type of brittle—made with sugar, honey, and various nuts and seeds such as pistachios, almonds, and sesame—has been made throughout the Middle East since ancient times. In Iran, it is called sohan asali (honey crunch) and mama jim jim; and in Afghanistan, it is called hasteh-ye shirin (sweet kernel).

Ingredients

  • ½ cup (170 g) honey
  • 2 tablespoon rose water

Method

  1. Line a baking sheet with a silicone baking mat.
  2. In a large-sized, heavy skillet combine all the ingredients using a long-handled wooden spoon. Cook over medium heat for 15 to 20 minutes, stirring occasionally with a long wooden spoon, until golden brown and caramelized.
  3. Pour onto the lined baking sheet, immediately smooth out using an oiled offset spa
