Baby green pistachio clusters are usually picked at the beginning of May. At this stage pistachios are unripe and their shells are greenish, red, soft, and a little bitter.
Ingredients
1pound (450g) baby green pistachios, stems removed
Sterilize the canning jars in boiling water. Drain and dry thoroughly.
To remove the bitterness: In a large laminated pot, bring 8 cups/1.9l water to a boil over high heat. Add the pistachios and bring back to a boil, reduce heat, and boil for 10 minutes over medium heat. Drain and rinse the pistachios.
