Method

  1. Sterilize a large jar in boiling water. Drain and allow to dry thoroughly.
  2. In a laminated saucepan, bring 4 cups (960ml) water and the sumac berries to a boil. Reduce heat, cover and simmer over medium heat for 35 minutes. Drain through a strainer set over a bowl, keep the sumac water, and discard the rest.
