  1. Quarter the quinces and remove cores with a knife. Do not peel. Wash, pat dry, and process in a juicer.
  2. Bring the sugar and water to a boil in a laminated pot. Add the quince juice and boil for 30 minutes over medium heat, stirring occasionally. Add the lime juice and cook for another 15 minutes or until the syrup thickens.
