In Iran, samanu is considered sacred because the wheat sprouts contain an enzyme that sweetens the pudding without adding any sugar. It is sometimes called a miracle pudding because of this.

Traditional Method

  1. Place the grain on a rimmed pan sheet and cover with cold water. Allow to soak for 2 days, changing the water every day.
  2. Drain into a drainer and cover with a cotton cloth or dish towel.
