The mushroom season in the Baltic States lasts a lot longer than in other parts of Europe, and mushroom picking has become a national pastime. Different versions of mushroom caviar can be found in any of the three Baltic countries; this one is enriched with brandy and is great for topping blini, but is also perfect served on toast. Any mushrooms will do, but a good selection of wild mushrooms will ensure a wonderfully pronounced flavour.
