In the Baltic they say there as many recipes for marinated herring as there are trees in the woods. This is a particular favourite flavoured with the warm tastes of fennel and juniper. It is perfect chopped in salads, as a topping on a blini, as a filling for a sandwich, or simply as a quick snack.

Ingredients

  • 8 salted herring fillets
  • 8 peppercorns, crushed
  • 7.5 ml/

Method

  1. You need to remove as much salt from the herrings as possible. To do this, put them in a colander and run them under cold running water for 2 minutes, then put them into a bowl. Cover with cold water and leave to soak for 4 hours. Drain in a colander and rinse thoroughly again.
